A+ Spaghetti Squash Recipe

I hope the turn into 2013 was a beautiful and safe one (oh, and FUN).

Morgan and Randy were in the kitchen last night creating one of the most delicious and healthy dinners we've ever served.  Spaghetti squash is really like spaghetti with a bonus: it's just plain healthier no matter how you look at it.  More on why that is later (just a hint, pasta turns to sugar... and sugar isn't healthy).

This dish feeds 4 and it is so good you might consider making it to have leftovers!  So double it.  You won't be disappointed.
 
 

A+ Spaghetti Squash Casserole

1 Spaghetti squash
2T evoo
1/2 red onion, chopped
3 garlic cloves, pressed
1 red bell pepper, chopped
1/2T ground cumin
1/2T oregano
1/2T chili powder
1 can of black beans (but Abundant Harvest sells organic black beans, FYI)
1 C corn
coarse salt and freshly ground pepper
1/2C cilantro (I think they used more because Randy grew it in our garden) and it was SO SO FLAVORFUL)
1 lime (again, more probably because we have a lime tree)
1C grated cheese (optional!)

Preheat oven to 375.  Cut squash length wise and place in a baking dish with 1” of water for 45 mins to an hour (it needs to be soft).  Once done cooking, carefully remove the seeds only and set aside.  Then pull out (with a fork) all of the “spaghetti” from the inside and set aside. Keep the shells that you cleaned out of the squash.


Blend your cumin, oregano and chili powder in a small dish with a fork, mix it up real good.


Rinse the black beans, set aside.  Cut your lime and squeeze it.  Have your corn ready to go!
Get all of your ingredients ready to roll before you start the next step.


Heat your EVOO in a medium size pot or pan.  Add the onions, garlic and red bell pepper.  Saute for 2 minutes (NO MORE, watch the clock)
During the 2 minutes add the cumin, oregano, chili powder and then a pinch of salt and pepper.  Once everything is added, saute for another minute.  Then add the beans, corn and cilantro.  Stir to combine slowly.  Add the lime juice and mix a few more stirs.


Add the “spaghetti” to the mix now and combine.  Taste it, is it delicious?  Adjust accordingly.
Switch your oven to BROIL.


Put all of the mixed ingredients back into the two half-shells of squash and put the cheese on top (again, optional.  You can cut it to 1/2 cup of cheese and just put cheese on one of the halves).


Broil until the cheese melts.
Serve it UP!
